      Stone mill is a type of machinery used to process grains such as rice, sesame, and beans into powder and paste. Starting with human or animal power, in the Jin Dynasty, China invented the water mill powered by water. Usually made of two round stones. Grinding is a two layer flat surface with texture at the junction. Grain enters the middle of the two layers through holes on the top and moves outward along the texture. When rolling through the two layers, it is ground to form powder. It can process soybean milk, rice milk, sesame paste, sesame oil, peanut butter, etc.

      Usage:

      1、 Select ingredients and stir fry seeds. Select mature and plump sesame seeds with moderate dryness and wetness. First, use a dustpan to remove various impurities, or rinse them with clean water to remove floating impurities and sediment that has settled to the bottom. Then stack them up and let them sit evenly. When stir frying sesame seeds, first heat them over high heat. When they are almost cooked, gradually reduce the heat and increase stirring to promote the release of smoke and moisture. When sesame seeds turn yellow brown, quickly take them out, spread them out to cool them down, and shake off the burnt debris.

      2、 Fine grind sesame seeds. Take the sesame seeds that have been stir fried and picked clean, and place them on a stone roller while they are still hot. Grind them repeatedly or finely with a small grinder. When grinding sesame seeds into a thick paste slurry, check the fineness. Use your thumb and index finger to twist open the slurry without leaving any residue, the finer the better. Then put the slurry into a basin and heat it over low heat in a pot filled with boiling water.

      3、 Mix the slurry. By grinding and stirring with boiling water, the oil in the slurry can be replaced. It is necessary to use boiling water with a temperature of 90 degrees or above, and the amount of water added is generally about half of the weight of sesame seeds. It should be added in three or four times, gradually reducing the amount of water added. After each addition of water, it should be stirred. The bottom of the slurry gradually forms a honeycomb shape, and most of the oil floats out. Add water to make the slurry, slow down the stirring speed, and skim off the oil after half an hour.

      4、 Vibration oil separation. After mixing the slurry with water, most of the oil is separated from the slurry. A dough stick or gourd like object can be used to shake the oil residue slurry up and down, promoting the formation of small oil droplets in the slurry to float out. Continuously vibrate and skim oil three times. When vibrating and separating oil, the temperature should be maintained at around 80-90 degrees Celsius to reduce the viscosity of the oil. The skimmed sesame oil, if it does not contain pulp residue, should not be filtered, which is a fragrant and transparent small ground sesame oil. The remaining oil residue can be used as soy sauce, monosodium glutamate and Dim sum fillings, but it should be eaten in time to prevent mildew and deterioration.
